At idle when I'm using Firefox, Steam, iTunes, etc the card runs a bit warm at around 45 - 50 C. In games such as Battlefield V and Rome 2 Total War it gets round 75 on Ultra Settings 2K and 144 Hz.

You can certainly set the fan curve to never go below 30% or so if you wish, but I can't see any reason to do so unless it just makes you feel more comfortable to see a lower number.
